I love pancakes!!! And so does my little girl. I judge my pancakes by their fluffiness - the fluffier the better. It took me a little while to perfect allergy friendly, refined sugar free pancakes, but I think these would make IHOP jealous. I hope you and your family love these as much as my little one does.
1 c unbleached all purpose flour
2 tbsp coconut sugar
2 tsp baking powder
1/2 tsp salt
1 c coconut milk
1 tbsp vinegar
2 tbsp coconut oil or MELT organics or Earth Balance (soy free)
Mix coconut milk & vinegar and let rest overnight if possible.
Mix dry ingredients until well combined.
Melt coconut oil, MELT Organics or Earth Balance.
Using a fork, mix wet with dry ingredients.
Oil a pan or griddle and set on medium high heat.
Pour or scoop the batter onto the pan or griddle, using approximately 1/4 cup for each pancake.
Enjoy hot with maple syrup! Add some fresh fruit or toss in some Enjoy Life Chocolate Chips for a real treat. And always have an awesome morning!
